Chili Beans

Ingredients

  • 2 cups dried small red beans
  • 2 cups dried black-eye peas
  • 3 oz bacon
  • 6 cups water
  • 1 tablespoon chili powder
  • salt & pepper
  • Chopped fresh cilantro or
    parsley

Preparation

Sort, rinse and soak the beans in water the night before.
Next day rinse well, combine beans in a large ovenproof pot with bacon and water and desired salt & pepper cover. Preheat oven to 275F.
Over medium heat bring to boil and place in the oven.
Check the beans every 30 minutes and add 1/2 cup more water each time if all the liquid has been absorbed.
Cook for 1 1/2 hours or until beans are soft.
Serve, sprinkle cilantro over beans and enjoy.

Yield

10 to 12 servings.
